Annie's Lemon Cake

In our house, we LOVE lemon cake including our two young boys - it is Mr 4's favourite cake and he is lucky because his Grannie makes the best one - well we think it's the best. Why not try it for yourself and let us know!

This cake is delicious served on it’s own or top with our yummy lemon curd cream (see below) and berries, or any good Greek yoghurt if you prefer.


250 grams Butter – softened

2 C White Sugar

6 Eggs

2 tsp Lemon Rind

2 C Self Raising Flour

1 C Sour Cream

Cream butter and sugar together. Add eggs one at a time mixing well to combine.

Add lemon rind.

Add 1 cup of flour, then sour cream and then add 2nd cup of flour and mix well.

Bake for 40 minutes at 180 degrees Celsius.

Once cooked remove from oven and leave in tin to cool. Drizzle with sugar syrup and leave in tin until ready to serve.


Sugar Syrup:

1 Cup Sugar

Juice of 2 lemons plus 1 cup of lemon juice.

Heat together in saucepan and mix until sugar is dissolved.


Lemon Curd Cream:

Whip 300mls of cream until soft peak stage, fold in 3 tablespoons of lemon curd until mixed together. Serve on top of cake or on the side.
