You'll be wanting to make this simple yet delicious sponge cake, it's a tried and true recipe that's easy to whip up for any occasion (do you even need an occasion?!) And it's especially easy with only 3 ingredients!

3 Ingredient Sponge Cake
- 3 eggs
- 1/2 cup white sugar
- 100g self-raising flour
Preheat oven to 170°C.
Beat eggs and sugar together for 5-7 minutes with a cake mixer or hand-held electric beater until mixture is pale and has doubled in size. Carefully sift flour over the mixture and fold in gently with a spatula.
Pour batter into a small well greased cake tin (we used a 19cm tin)
Bake for approximately 20 minutes or until top is lightly golden and springs back when gently touched.
Allow the cake to cool in the tin for a 5 minutes then transfer to a cake rack to cool completely. Decorate and finish as desired - we love it simply sliced in half and spread with a generous amount of strawberry jam and whipped cream and then sandwiched back together. Sprinkle with a fine dusting of icing sugar and serve for a delicious anytime treat!
