Easter Chocolate Brownies.
  • 55g Cocoa
  • 50ml Boiling Water
  • 85g Unsalted Butter
  • 225g Castor Sugar
  • 1 Egg - Beaten
  • 1/2 teaspoon Vanilla Essence
  • 100g Plain Flour
  • 1/4 teaspoon Baking Powder
  • 100g Chocolate Chunks
  • 12 Mini Creme Eggs

Mix together cocoa, boiling water, and half of the melted butter. Add the egg, sugar, vanilla and butter then sieve in the flour and baking powder. Mix well.

Stir in the chocolate chunks. Pour into a lined baking tray. Bake at 180oC for 15 minutes, then top with Creme Eggs. Return to oven and bake for further 10 to 15 minutes or until cooked.
