A few years ago I would bake muffins more often than cupcakes, but these days cupcakes seem to rule in our house. We love it though when our lovely neighbour Lorraine pops over with these gorgeous muffins fresh out of the oven - they are a real favourite! They are easy to make and we like to have them with a dash of butter and a coffee - simply delicious!
Lorraine's Date & Orange Muffins
- 1 orange, quartered
- 1/2 cup orange juice
- 1 egg
- 1/4 cup oil
- 1/2 cup dates, chopped
- 1 1/2 cups flour
- 3/4 cup sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 3 tbsp soft brown sugar
- 3 tbsp walnuts finely chopped
Remove pips from the orange and finely chop with skin on then place in a kitchen whizz. Add the orange juice, egg, oil and dates. Pulse briefly.
Tip into large bowl and gently fold the dry ingredients into the orange mixture.
Spoon into greased muffin pan and sprinkle over the top the combined brown sugar and walnuts.
Bake 15 minutes @ 200c. Cool briefly in pan and tip on to wire rack to cool further.
Walnuts can be substituted by mixing cinnamon and brown sugar together and sprinkling on top before baking.
